big fat round nutty cookies

this is the first time i used egg replacer in baked goods and i've been baking vegan for like, 2 years! oh em gee i can't believe i have been missing out on such a good thing! i don't mean to repost recipes here but i just wanted to share with you guys my liberation from the dismal world of baking without egg replacer. adding the egg into the margarine mixture i could tell right away how good it was going to be- the consistency was very very close to what beaten eggs in butter/margarine would be like, and i was in heaven (despite the fact that it's one of the hotter weekends here and the oven was pre-heating).

1/2 cup margarine
1/2 cup grainy sugar equivalant
1/3 cup creamy peanut butter
2 eggs equivalent
1 mashed banana
splash of soy milk
couple drops of vanilla

1/2 cup whole wheat flour
cinnamon
pinches salt
1/2 tsp baking powder
1, 1/2 cup of sunflower, flax, pumpkin, millet seeds, rolled oats, peanuts, crushed almonds, raisins, dried fruit bits

oven at 375F, made 15 large cookies (quite thick and 4 inches in diameter)

very simple- i just whipped the sugar into the margarine, stirred in egg replacer (3 tsp replacer and 4 tbsp water) soymilk, peanut butter, banana, vanilla
sifted together the flour and powdered ingredients and dumped all the dry ingredients including the nuts etc into the wet mixture; stirred around until it was all good and mixed.
ploped big drops of dough onto greased baking sheets (i had to use 3... prolonging the heat in the house, i'm glad the breeze picked up)

they baked in the oven for about 13 minutes, and i ate 3 right away. i am now stuffed. i haven't had a self-made vegan cookie this good! (it was a tad too sweet for me, so next time i'll reduce the sugar or maybe totally go without sugar since the banana was sweet)
