Tofu as cheese substitution

I am planning on making an eggplant parmesan for my mom this weekend, but I don't have the money to buy any faux-cheeses, and my mom really dislikes any fake foods. Right now I have tofu and I think that would be an acceptable substitute for cheese, but I don't know how I can utilize it to appear to be cheese with the taste. Help!
