cheerio bars

i was hoping to veganize this recipe (possibly add dried fruit, raisins, chocolate or carob chips)

Cheerio Bars

  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup honey
  • 3 cups Cheerios cereal
  • Salted peanuts


Bring sugar and honey to a boil in 2 quart saucepan. Remove from heat, stir in peanut butter until blended. Pour in cheerios and peanuts and mix until well coated.
Spread in buttered 9 x 13 pan and let cool.

the peanut butter, sugar, and peanuts shouldn't be a problem. i'm using organic high fiber o's in place of the cheerios. my only question is, will agave nectar sufficiently replace the honey in this recipe? (i'm psyched to make these..they're my cookie/granola bar compromise) thanks! =D

edit: i used this recipe, and substituted the maple syrup with agave nectar. added chopped almonds/chocolate chips.
i really think the maple syrup would've worked better, since the bars didn't really stick together.
i also used an organic peanut butter that only contains peanuts, so maybe that affected it.
they were still amazing. i'm definately going to make them again, with soy nut butter and raisins.
