egg yolks for kolacky

let me apologize in advance, i hate seeing egg questions, too. but i wanted to make this recipe:

1 pkg dry yeast
5 cups flour
1 pound softened margarine
3/4 cup sour cream
3 egg yolks
2 tablespoons granulated sugar

in a small dish, mix yeast with 2 tables spoons flour, 1 teapoon sugar, an 1/4 cup warm milk. cover lightly and let rise. in a large bowl, mix flour and margarine til crumbly (use pastry blender). in a medium bowl, mix sour cream, egg yolks, and sugar. then add yeast mixture. combine all ingredients in large bowl and mix thoroughly with hands. divide dough into 3 or 4 sections. wrap in wax paper and refrigerate overnight. bring dough to room temperature. roll out thin on well floured table or large board. cut to desired size and shape and spread with filling roll or fold and bake at 350 degrees for 10 minutes.

and usually i just use ener-g to replace the egg yolks (they have a special recipe on the box for how to do it) but i am all out of ener-g and forgot to pick some up at the store (and the store closed). i don't want to use bananas cause the flavor is too strong. should i be concerned about it "rising"? these cookies tend to come out fluffier than my aunt's non-veg version anyway. it's got yeast. is there some sort of powder mix of my own i could make (assuming i don't have a lots of random potato flours and xanthan gum laying around) or would it be ok to try using apple sauce? i have flax seed, but no coffee grinder to grind them with. any ideas?
