chocolate cake

i just made this chocolate cake. it turned out pretty good, but i was expecting a little more, and i wish i wouldve used "butter cream" icing rather than chocolate.

2 cups sugar
1 3/4 c. flour.
3/4 c. cocoa powder
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 egg subs
1 c soy milk
1/2 c. vegetable oil
2 tsp. vanilla extract
1 c. boiling water

heat oven to 350 degrees, combine all dry ingredients, add egg sub, soy milk, oil and vanilla. beat for 2 minutes on med. speed. stir in boiling water.

pour into a 9x 1 1/2" round pan and bake for 30-35 minutes.

1/2 c vegan margarine
2/3 c cocoa
3 c. powdered sugar
1/3 c soy milk
1 tsp. vanilla extract.

melt maragarine, stir in cocoa. alternately add in sugar and milk, beating on medium speed. add more milk if needed, then add vanilla.
