Help please..

I found vegan brownies. They are the kind that are prepacked and you just add, oil, eggs, water and bake. Ive replaced the eggs with apple sauce, and tofu and neither one worked out. The brownies didnt rise. Any suggestions?

mac 'n cheese & pb/choco fudge

didn't have a tried-and-true recipe for mac-n-cheese, so i kinda winged it today. i'm pretty happy with the results!

1 pound of pasta
3/4 c rice milk
splash of water
1/2 c oil
1/2 c soy margarine
sprinkle of parsley
sprinkle of red pepper
sprinkle of black pepper
3 tbs soy sauce
3/4 c nutritional yeast

melt margarine and mix everything but pasta together in a bowl. cook pasta according to box directions, drain, and spread out in a baking pan. pour the "cheese" mixture over the pasta and stir. top with a sprinkle of black pepper and fresh parsley. place in 375 degree oven until top has a slight golden crust. enjoy!

for dessert, i made fudge:

1 c peanut butter
1 c maple syrup
1/2 c cocoa powder (i'm sure melted chocolate chips would work just as well- in fact i'll try that next time)
1/2 c soy margarine

melt everything in a saucepan over low heat, spread into a baking pan, and refrigerate until firm. cut into squares.

by the way- anyone have any creative recipes for couscous? i usually just prepare it with garlic, oil, and sauteed broccoli and was looking for something new!
