Ooh MMMMMMMMMM! I used dried (soaked for an hour or so to soften) dates as the sweetener in cookies for the first time and WOW! so GOOOD! I don't have a recipe to share because I just threw the batter together... I used more oats than flour (spelt flour), cinnamon, just under a tsp baking soda and just over a tsp baking powder, vanilla soymilk, gorgeous blackstrap molasses. Oh, and crushed walnuts. I probably ended up with like 2 cups of dry and 1 1/2 (1/4?) cups wet. I used a dozen dates. The cookies are just luuuuurvely! The best cookies I've made in a while!
I'm soo excited: I can't wait to use dates in more recipes!!
Any tasty (and relatively easy) ideas for spinach? haha...I bought a bag of prewashed spinach and made a casserole last night, and have been making veggie pizza, but now I'm out of ideas, and there's still a TON of spinach left!
