ok to all of you who requested my raw gelato recipe (courtesy of the uncook book)...i'm not raw, just vegan, so if you're not you can change it up a bit to just keep it vegan. but some of you might be raw and looking for this great dessert too. either way, its fucking delicious for all:

2 cups raw cashew butter (i make my own with my juicer, but i guess you can just buy the cashew butter at a coop or wholefoods or whatever)
1 1/2 cups maple syrup
2/3 cups almonds, coarsely chopped (i usually just buy the pre-slivered ones in bulk)
1/2 cup raw carob powder (optional)

in a bowl mix the cashew butter and maple syrup. Fold in chopped almonds. Throw in the raw carob powder for a chocolate variation if you prefer. Spoon the mixture into individual serving bowls and freeze (i usually put it all into one small tupperware type thing).
Serve frozen.
Serves 2.

FYI: it doesn't really FREEZE like ice cream or anything. just becomes cold & harder in texture.

Banana Bread

Hey does anyone here have a copy of "How it All Vegan?"....I really need the recipe for the yummy banana bread, because i promised my animal rights class i'd make it for our end of the year 'party'---i lost my copy about a year ago when moving out of my dorm room for the summer. If someone could copy the recipe here i'd be very grateful.

Eggplant Spread (aka Eggplant Caviar - without actual caviar :)

Hi everyone!

This is my small contribution to this community :) Russian cuisine has lots of vegan recipes ('cause in Orthodox Christianity there are 220 days per year when you can eat only vegan stuff!). This is one of them. i love this recipe because you can change amounts, replace and add more veggies, and it always turns out delicious (as long as it still has eggplant and bell peppers). So you can have your own personalized Eggplant Caviar

1 medium eggplant diced
2 bell peppers diced
1-2 carrots grated
1 onion diced
2-3 tomatoes diced (or canned diced tomatoes)
2-3 tbsp olive oil
parsley, dill, garlic, salt, pepper (optional)

Start by sauteing onion in olive oil, when it turns golden, add carrots and bell peppers, sautee it for 4-5 min, then add eggplant, then tomatoes, then whatever other veggies you want and stew it all together for 20-30 min.

It can be enjoyed both hot and cold as a spread or dip.
