yay, my first functional vegan cooking experience = Lentils

Here's the original recipe from here

I substituted the chicken stock for 3 vegetable bouillon cubes, and left out the celery and celery seed (because I don't like cooked celery and I didn't have any celery seed) I left out the vinegar entirely. It says to simmer for 45 minutes, but I was using a lentil/bean/pea mix instead of just lentils so it took me about an hour and a half, I think the trick is to keep checking it/stirring it. It should be a slightly mushy brown consistancy (the best way to eat lentils!). I think it would go well with a bit of cayenne too but the flavor is pretty good by itself! Were I to do it again however I think I'd use 5.5 cups of water instead of 6, and add more if necessary.

Tempeh and noodles

I made this last night as a variation of a recipe I found. I'm not big on Tempeh, but this was quite tasty.

Ingredients:
4 to 8 oz Tempeh, cubed (amount depends on preference. I only used 4 oz)
1/2 onion, chopped
4 to 6 mushrooms, sliced
garlic powder or crushed garlic, to taste (I used about a tablespoon)
3 tablespoons soy sauce
1/2 cup water
chopped red, green, and yellow bell pepper, if desired (I added some frozen pieces)

pasta of choice, enough for two
water for boiling
1 teaspoon olive oil or other oil
1/2 teaspoon salt

Directions:
1. Mix together first 7 ingredients in a medium skillet. Bring to boil and reduce heat. Let simmer for 20 minutes.
2. Boil noodles in separate pan until al dente. Do not overcook.
3. Drain noodles and return to pan. Stir in oil and salt.
4. When both the noodles and tempeh mixture are cooked, serve tempeh over noodles.

Serves: 2
I also had a spinach salad on the side. Yum, Yum!

Smoothies!

Sorry, I've been posting in here a lot.

Anyhoo... I bought some of that Tofu2go flavored tofu. The Peach/Mango flavored one... and I could not eat the stuff plain because of the gel-like consistency. It was seriously grossing me out. So, I put it in the blender and added a whole banana, a cup of mixed frozen berries, and a handful of crushed ice. Blended for a few secs, and love, love, love the results.

You should try it. Really. :)
