coconut frosting?

i made the perfect vegan cake, and i was wondering if any of you had a recipe for a coconut frosting using coconut milk. i found this recipe, but i don't have any coconut oil, and i can't figure out what this icon is "Þ" do any of you have "The Artful Vegan: Fresh Flavors From the Millennium Restaurant," by Eric Tucker and Bruce Enloe? i'm assuming the icon means 1/4 cup... or 3/4 cup.

(no subject)

I want to make a peach pie for dessert tonight, but I only have frozen peaches. I've never used frozen peaches before, so I was wondering if there was anything different I should do. Should I thaw them first? Should I bake them frozen -- and if so, a lower temp first, then a higher temp? And for how long?

My friend and I are college students living in the dorms, and we're trying to come up with fairly cheap ways to eat healthily with just a microwave, a toaster and a george forman grill (which is, of course, illegal). Lately we've been very lethargic, doing nothing by sleeping. And we're not sure why. We've narrowed it down to a few things: Iron deficiency, not enough protein and too much carbs. We do tend to eat rather heavy meals, with a lot of pastas and potatoes. And we're probably not getting enough protein. Does anyone have any recipes that would help us to eat more healthily with lighter meals?

vegan Chinese!

People sometimes ask me if being a vegan is hard... the only hard thing, and this is totally honest, is trying to decide what to eat first.

Here is my lunch/dinner, from P. F. Chang's Chinese Bistro (www.pfchangs.com). On the left is Ma Po Tofu, which is fried silken tofu in a yummy, spicy sauce, with steamed broccoli. On the left is "Buddha's feast", which is broccoli, more tofu (the thinly sliced brown and tan-colored stuff), sugar snap peas, asparagus, carrots, mushrooms, baby corn, and ginger in a yummy sauce that happens to be vegan. At the top of my plate is short-grain brown rice.
