Eggplant Ratatouille with shells

1 bell pepper (any color), chopped into bite sized pieces
1 medium zucchini, halved lengthwise and sliced into half moons
2 cloves garlic, chopped
6 Roma tomatoes, coarsely chopped
1 medium eggplant, cubed
1 tbs olive oil
1/2 tsp dried basil, or italian spice mix
2 cups small pasta shells

Cook pasta as directed. While it is cooking, saute the pepper and garlic in olive oil for 5 or so minutes until the pepper is tender. Add tomato, eggplant and basil. Cover and simmer for 10-12 minutes or until eggplant is still spongy, but starting to look a bit wilted (brown) at the edges. Uncover and simmer until slightly thickened, adding salt and black pepper to taste. Once pasta is finished, drain, shock and then remove as much excess water as possible. Dump in with veggie mixture and stir gently, incorporating the pasta. Heat through and sprinkle with cheese substitute with desired. Feeds roughly 4 people (and quite well at that).

I am not sure if someone posted this before, since I have only been a member of this community for a few weeks, but...

Does anyone have a recipie for a jelly/marmalade/fruit preserve? I know its easy enough to find a vegan one in the store, I just prefer to have homemade just about everything.

I looked in the index, but I didn't really find anything.

I have a pack of soft tofu which I bought to make cookies. However, I lost the recipe, and now I have a pack of soft tofu.

Does anyone have a cookie recipe that has soft tofu used in it?
-Also, I HATE chocolate, so please, no choc.chip cookies.

Zucchini-Seaweed Soup

I was presented with the most monstrously huge zucchine [courgette], and decided to make soup. It turned out rather well.

The end result is a rather pretty, subtle soup which reminds me of soups I've had in Chinese restaurants. One of these days, I must learn how to upload the pictures from the digital camera and add them to posts.

Two Questions.

First. I went to the In 'n' Out Burger today (it's a California thing, basically a glorified burger hut)and I had a really bad craving for some fries. I heard from somewhere that they used to deep fry their fries in vegetable oil but they may have stopped. I asked one of the ladies who worked there if they use any lard or anything like that and she said no. I ate some, but I can't stop wondering what was used to deep fry the fries. Does anyone know what they use and if it has any animal content in it?
Second. My mom's boss who is really into vegan food (even though she's not a vegan) told my mom that if you take a B-12 supplement (which I do) that you also have to take a B complex multi vitamin at the same time. I have no idea what the B complex vitamin is but I guess my mom's boss was making a huge deal out of it, does anyone know about it?

(no subject)

This evening, my brother and I made a Lebanese-style feast for our parents' 30th wedding anniversary. The idea was to feed the four of us plus Granny, but this lot made enough for another couple of hungry people at least, especially since I also made a chocolate cake for afterwards. I'm the only vegan, and my brother made a few meat kebabs on the side, but all the rest of the dishes were vegan, and very well-received. I found most of the recipes online, but made a few modifications, so I'll post the little collection here in its entirety. There's also a picture of everything (except the kebabs, of course) posted here over on veganfoodpics :-)
