thai mussamun curry

last night's dinner:

1 small sweet potato, in 1" chunks
2-3 small white potatoes, in 1" chunks
1 med. onion, chopped
1 clove garlic, minced
5oz. baby bella mushrooms, quartered
1 1/2 Tbl. mussamun curry paste
1 cup lite coconut milk
1/2 cup veg. broth
1 tsp. soy sauce
1/4 cup chopped cilantro
2-3 Tbl. peanuts, coarsely chopped

1. boil the potatoes/sweet potatoes until they're about half cooked.
2. heat half of the coconut milk in a skillet and add the curry paste to it, mashing it into the milk until it dissolves. when the mixture comes to a boil, add the onion and garlic.
3. quickly sautee the mushrooms in a seperate pan before adding them to the onions.
4. add all of the potatoes, the broth, and the soy sauce to the skillet and allow everything to come to a boil.
5. when all is tender, add the remaining 1/2 cup of coconut milk, the peanuts, and the cilantro and remove from heat, stirring.
6. season with salt to taste.

serve with jasmine rice or eat plain. :-9

at a loss

I made a vegan cake that had icing which needed a pound of silken tofu. well, you can only buy silken tofu in 12 oz. ( i hate how they do that ), so i had to buy 2 and now have 8oz. of silken tofu left. i don't want to waste it, so i was wondering if anyone had any yummy small easy recipe i could use the rest in. thanks so much:o)
