easy salad

As an attempt to use all the tomatos I have been given from people's gardens, I threw this salad together for lunch... very simple and very good...

firm tofu, cucumbers and tomatos cut into cubes mixed with dried dill and a little salt. I would have used fresh dill if I had it on hand and you can probably add some olive oil if you'd like, but I don't think it needs it.

This is really good, EASY, and cheap.

One 30 oz can of pinto beans.
One 15.25 oz can of whole corn kernels.
One 7 oz can of diced green chiles.

Throw them in a pot and heat. It's so freaking good. You can have variations and such but even with just those three ingredients it's good. You don't even have to drain anything, just throw what is in the can into the pot.

My dad chops a tomato or two and throws that in. And after it's warm/hot, and it's in your bowl, little chunks of avocado is REALLY good on top.
