Erica's Mom's Broccoli Casserole - Veganized

I'm so proud of this recipe since I invented it myself, with inspiration from my mom's broccoli casserole, which was inspired by my grandmother's broccoli casserole, which was probably inspired by someone else, too. Anyhow, the original recipe was a layer of chopped broccoli, a layer of white rice cooked with cream of chicken soup, and cheddar cheese on top. Here's how I do it:

You'll need:
1 pound of broccoli (fresh or frozen, chopped)
1/2 pound of green beans, cut into bite-size pieces (fresh or frozen)
2 cups uncooked brown rice
1 cup vegetable stock
1 tablespoon dried oregano
2 cups (14 oz can) of vegetarian vegetable stock
1/2 cup diced onion
1 tablespoon vegetable or olive oil
2 tablespoons flour
3 cups plain soymilk
1/2 cup chopped walnuts
2 tablespoons vegan margarine (optional)
a lightly oiled casserole/lasagna dish

the basil bush in our garden is taking over. it is nearly taller them me, and beautiful. so far i have thrown basil in various salads, and pasta sauses, as well as played with a bunch of pesto recipes. of course i have some hanging up to dry, but now i don't know what to do.

anyone have any recipes that use basil??

Weirdest thing

Did anyone ever eat Gaytime ice-cream? It was on a stick, and had some sort of chocolate coating on it with little bits of biscuit stuck on it everywhere. Inside was kind of a caramel tasting stuff, with what I suspect was vanilla in the centre. If anyone ever ate this weird combination of an ice-cream, do you know any way to make a vegan imitation, or where to get something similar? I usually never get cravings for things un-vegan, but this was some bizarre exception.


does george foreman like vegetables?

I went to a cookout fairly recently where there were absolutely delicious grilled vegetables (squash, zucchini, eggplant, onions, and portobello mushrooms!). they tasted as though they had been marinated in worcestershire or some other steak sauce.

is it possible to achieve the same grilled effect (the texture was perfect) with a george foreman grill that one would get with a regular/outside grill for these vegetables? we don't have a large grill- only a foreman. what marinades would you suggest?


Cream of Broccoli Soup

i posted several days ago, asking for suggestions for my silk coffee creamer, and so many people reccomended 'cream of ___" soup, AND since i've been getting sick...
well, it seemed like soup time to me...
i searched the internet and found a recipe for a cream of asparagas soup which looked AMAZING, and went dumpstering, recipe in hand. The dumpsters had no asparagus, but tons of broccoli. i can generally bring myself to purchase food if i have a specific recipe in mind, but I am broke, and cream of broccoli soup sounds just as good. So, i went fexible, using the asparagus recipe as a starting point.

I've never had a cream-of-anything soup since going vegan, and, damn, did it turn out good. I think it would work about the same with soymilk, and really reccomend you try it. I'm providing the recipe, along with general soup making tips i've learned from various cookbooks and years of experience
