Today was my birthday (Huzzah!), and I made my very first vegan cakes. The archives here are wonderful, so I grabbed the recipes from there.
I first tried this one
(in the comment), but it came out very dense and tasted funny to me.
So I tossed that one (I'm going to feed it to the duckies tomorrow) and then tried this one
(the one in the comment but without the chai part). It was lighter and had a much better taste, especially with dark chocolate fudge icing (Duncan Hines).
Still, I'm in search of a very fluffy cake. I thought of doubling the "egg" to see if that would give it more lift, but I haven't tried it yet. Do you have any ideas on how to adjust the recipe? Any recipes for a very light cake? I'm sure it's hard to do with vegan ingredients only, but I have faith that there's one out there.
