coconut and avacado...

So I found a few links in regards to coconut cream, which can be whipped similar to dairy cream. However, due to the fact that coconut is not exactly low in fat, I was a tad concerned. However I did find an interesting site on coconut oil (which would be in the cream)
I'm guessing this is better than cool whip ? Does anybody else use coconut cream as whipping cream ?

I'm wondering if there are any recipes for making vegan cheese that consist mainly of avacado, it seems to have a solid enough and high enough fat content that it might work as a semi hard cheese .

any help would be useful .

vegan hermit cookies

here's a recipe i took from one of my mom's old cookbooks and veganized it.

1 cup seedless raisins
1 cup cut up dates
1 cup coarsely chopped nuts (you can use any kind of nut really, i used almonds because we didn't have any walnuts or pecans)
2 1/4 cups whole wheat soft pastry flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp all spice
1/8 tsp nutmeg
1/2 tsp vanilla

4 tbsp margarine (i used Earth Balance)
4 tbsp vegetable shortening
sugar: it calls for 1 cup of brown sugar but instead i used 3 loose handfuls of Sucanat. to make up for the moistness lost from not using brown sugar, i added half of a mashed banana.

egg replacer equivalent to 2 eggs (i used powdered egg replacer)

here,the recipe suggests creaming the margarine and shortening with brown sugar before putting it in the recipe but i just put it in, mashed it with a fork and stirred it up really well.

i found the mix was too dry so i added about a tbsp of water and a tbsp of olive oil.

Cranberry sauce

Someone gave me some good cranberry sauce (like people have on their turkey at Thanksgiving). I can't think of anything to eat it with though. It's too sweet by itself, and I tried it on bread like it was jelly, but that didn't really work. Any ideas?
