what I cooked last night

It was really simple but tasty.

1 zucchini
1 summer squash
1/2 large sweet onion
1/2 12 oz. pkg of sliced mushrooms
4 stems Italian parsley, chopped

I cooked this in a Caphalon pan on medium heat with a tiny bit of olive oil until it was tender. It came out delicious. There were leftovers I had for lunch just now. I'm currently making up another batch.

what sort of egg replacers do you guys use for savory recipes? i've had a lot of luck using substitues in my baked goods, (i mostly use applesauce, bananna, or baking powder/vinager) but i'm unsure what sort of replacements to use for other things. for examle i want to try and make vegan meatballs (i've made veggie ones out of gimmie-lean, but used an egg as a binder) i also have a polenta recipe that calls for two eggs. any idea what i could use instead?
