For the not quite gourmet vegan

I just started easyvegan for those of you who would enjoy easier to make recipes. This shant be your super gourmet recipe exchange, but some good (probably cheap-ish) recipes will get my super easy, super yummy grilled cheeze of questionable nutritional value. Hopefully simple and easy doesn't mean all grease all the time, but just in case...beware.

Cranberries and squash

I've never been a cranberry fan but I found them to be great last night.

1 sweet squash (dumpling, acorn, delicotta, something like that)
1-2 handfulls freash cranberries
1-2 tablespoons sugar

start baking the squash how ever you normally do.
in pan heat oil, add cranberries. pan fry until they have "popped"
Add some sugar and fake a carmilization by cooking it for awhile longer or until disolved.
Take out the squash, pour in the center and bake longer until the squash is done.

This is a yummy dessert or side dish.

I am not a big fan of Thai food.. but I can't resist some mango and sweet rice. Lately they haven't offered it though since mangoes are out of season.
But I bought a mango at the grocery store today - and was wondering if anyone knew how to make the sweet rice??

The Best Corn Bread

Here's my mama's veganriffic corn bread recipe. It's the best corn bread I've ever had (and I swear it got a million times better tasting when she veganized the original recipe). This is also a super easy bread to make and really hard to mess up.

1 cup corn meal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/4 cup melted soy butter (Earth Balance)
1 cup soy or rice milk

Combine corn meal, flour, salt, baking powder and sugar. In a separate bowl, combine melted margerine and soy milk.

Add dry ingredients to wet. Mix only until combined (you don't want a whole lot of air in the batter). Spread batter evenly in a greased (with soy butter) 8" square pan. Preheat oven at 400 degrees. Bake for 20 minutes, check at 12 minutes.

For a butterscotch effect, top hot corn bread slice with soy butter and mayple syrup.
