Christmas Cake, aka Fruitcake: Step One

Thanks to the constant stream of holiday-related programming on the Food Network, I have become inspired to make a Christmas cake, aka fruitcake. I have fond memories of my mom's homemade fruitcake (boxed date-nut bread mix with marascino cherries), but I wanted something a step up from dayglo cherries (no offense to said neon fruits). This recipe is a multiweek process, so this is the result from the first step: making the fruitcake.

The verdict on the fruitcake before basting: delicious. Moist, dense and bursting with fruit flavors. I will taste it again in three weeks, when I present it to my parents as a present, and will update you on the flavor then!


I have taken a look in the memories, and there are lots of muffin recipes, but I am looking for the apple cinmamon muffin recipe from the Vegan Planet cookbook. Do any of you have this (or have you tried this)?

Also, I've never made muffins before, and it seems like a bit of a daunting task, and I'm afraid that I'll mess it up. Do any of you have tips or impossible-to-mess-up recipes or other suggestions?

Shortening and Cocoa

Can I substitute soybean oil for recipies that call for non-hydrogenated vegan margarine or when veganizing recipies that call for butter?

Also what is the difference between Dutch processed cocoa and just plain cocoa? I hope it's not just 'it was processed in the Netherlands' or I will feel silly.


Quick n Easy Vegan meals?


Can anyone tell me of any easily made vegan products? I love cooking up vegan food, but most of the time I just don't have time to make it. Is there anything I could just throw in the microwave or heat in the oven for a few minutes and have a nice vegan meal? Also, can you tell me where these things are available? I have two good health food stores near me but they don't have many easy meal options for vegans. Thankyou!

(no subject)

I am looking for a strawberry lemon cake recipe that I swear was posted here recently but I can't find anything in the memories, other vegan communities, Google and my end of semester brain is losing hope. Did I hallucinate the recipe? Am I insane? Maybe studying Russian and writing essays every day for weeks has made me imagine wonderful cakes?

Please help me. I really want to make this on the weekend for my partner's birthday so he does not have to eat one of the two boring vegan chocolate cakes available in bakeries in my town for his birthday.

baking challenge.

ok, so my dad just told me they are having a big holiday breakfast at his work next week, and he asked if i would bake some vegan treats for it.
i need some really delicious recipe, as this will be for all non-vegans, something they will have no idea is vegan.
it needs to be easily transported, and breakfast-y perhaps.

ideas, please!!!


pressing tofu

I really love dry tofu, when it's all pressed and slightly chewy. I hate having to wait hours to press it using paper towels, or putting a plate with a weight on top. So I came up with this idea: blowdrying tofu.

Do you think it would work?
