Peach Vegan Ice Cream
1 cup unsweetened soy milk
1 cup sugar
3/4 cup soy creamer (if you can't find the soy creamer, more soy milk would probably work just fine)
1 tsp vanilla extract
Combine the unsweetend soy milk with the sugar and cook over medium heat. Stirring until the mixture boils. When the mixture boils, remove from heat and transfer the mixture to the fridge and allow it to cool (or you can put it in the freezer for 15 minutes or so to speed up the process). When the mixture has cooled (you want it to be pretty cold) add the soy creamer and vanilla. Remove the skin from the peach and mash the peach into tiny pieces and add it to the mixture. Place the mixture in your ice cream maker's freezer bowl and churn until the mixture reaches the consistency of soft serve ice cream (around 20 minutes). Transfer the mixture to the freezer and allow it to harden for about 3 or 4 hours. Enjoy when desired.
This recipe makes a nice vanilla ice cream also. The peach isn't neccessary but makes it awesome :). I'm going to experiment with more flavors to see how they turn out. But this recipe is super easy and works every time. I hope you all like it.
