borscht plea

oh someone please he'p me. he'p me, he'p me!!!

I need to make some borshct soup. Dazee has just started a new cycle of cluster headaches and we must remove the insurgency! He read online that some dude went nuts with beets, made some borscht soup, juiced a few beets, and viola! clusters were gone.

I'm looking and looking for borscht. A very specific European variety. Dazee and I had some a few years back in this great wee cafe in Montreal. The Borscht was vegan of course, with a broth (not thick) and had vegetables and chickpeas in it. There are no recipes like this on the web. I find the meat kind, I find the kind with cabbage and tomato paste, the sour cream kind, but not the sweet juicy brothy celery and chickpea kind i'm looking for. If i had to guess, I think I remember that it was a Ukranian borscht, but still I searched for that to no avail too. Also, dill is out. Dazee hates the dill.

Any suggestions? Any veteran beet soup recipes with big fat chickpeas hiding out there??

EDITED TO SAY: THANKS TO helmine, gleefulfreak AND weizenwind I AM ALL SET. YUMMY, AWESOME RECIPES HAVE BEEN POSTED...

creamy curried vegetables

This dish was inspired by the recipe for "Creamy Curried Vegetables" in the How It All Vegan! cookbook.

It's onions, carrots, garlic, sweet potato, broccoli, corn, and green peas in a sauce of soymilk, tomato paste, hot madras curry powder, and cumin, on top of white rice, with a few fresh green onions sprinkled on top. I like the colors and the fact that when you pair it with rice, it's a complete meal. I sometimes like to put margarine on pita bread, toast it, and pretend it's naan. :)

Sorry the photo is a bit fuzzy, I'm still getting used to my new camera. (the new camera also explains why there have been so many food pictures lately.)

Vegan Cream Cheese Frosting

I made a frosting using better than cream cheese for my cupcakes. The frosting was very good.  I just made it up last second and it is a nice whipped frosting. Thought I would share the easy recipe.

Vegan Cream Cheese Frosting

  1. 1 tub Better Than Cream Cheese/Plain
  2. 1/2 Cup Vegan brown sugar
  3. 1/2 stick Soy Butter

Cream together with spoon. Microwave for 20 seconds. Stir, and refrigerate.
