I need to make some borshct soup. Dazee has just started a new cycle of cluster headaches and we must remove the insurgency! He read online that some dude went nuts with beets, made some borscht soup, juiced a few beets, and viola! clusters were gone.
I'm looking and looking for borscht. A very specific European variety. Dazee and I had some a few years back in this great wee cafe in Montreal. The Borscht was vegan of course, with a broth (not thick) and had vegetables and chickpeas in it. There are no recipes like this on the web. I find the meat kind, I find the kind with cabbage and tomato paste, the sour cream kind, but not the sweet juicy brothy celery and chickpea kind i'm looking for. If i had to guess, I think I remember that it was a Ukranian borscht, but still I searched for that to no avail too. Also, dill is out. Dazee hates the dill.
Any suggestions? Any veteran beet soup recipes with big fat chickpeas hiding out there??
