Cheap, Easy Student Meal

This is my first recipe post on here. Just to warn you, this recipe isn't the healthiest but it's meant for a cheap way to make a meal when you're a student and on a budget. I whipped it up one day a few months ago and it's one of my favorite easy, fast meals now.

This soup has an indian influence to it. lentils and sweetpotato are very nutritious. A winter squash or an apple could be a good addition.

1 cup red lentils
1 sweetpotato, chopped
1 onion chopped
1 tbs minced ginger
1 carrot, chopped
2 tablespoons oil
8 cups water
1 tablespoon or so of garam masala
salt and pepper to taste
2 tablespoons lemon, lime juice, or tamarind juice

Sort the lentil for rocks or nasty lentils and rinse.
In a soup pot saute the carrot, sweet potato and onion in the oil until the onions soften.
Add the 8 cups of water and lentils and bring to a boil.reduce to low heat put on the lid and let simmer for a few hours stirring ocasionally. Let it cook down with the lid off until it's as think as you want it and the red lentils and sweetpotatoes have fallen apart.
Add salt to taste, garam masala, and the citrus or tamarind juice.
Serve with tortillas or bread or a grain dish.

(no subject)

I've been trying to eat more beans, so I made these two recipes but they turned out bland bland bland bland. I can't stand it and I don't know what to add.

One of them was:
1. sautee onions, garlic, red and green bell peppers
2. add black beans, tomato, cumin, oregano, and lemon juice

the other was:
1. Sautee onions and garlic
2. add red beans, brown rice, coconut milk, and thyme.

The second, especially, was miserably bland and I have 2 more servings left in the refridgerator.


Need some help...

Hi everyone!!

Think I need some help.
Tomorrow I'm celebrating my birthday, and some friends (non-vegan) are coming over. Somehow I promised them food. I don't have a lot of money, I was thinking of serving either Risotto or a stew of some kind. Witch would you prefer? What to put in it? I never made risotto before. And what for dessert?
As I said: dont have a lot of money, so it has to be cheap, and since I live in sweden I wont be able to get some special brands. Another thing, I want to make it simple, dont have time to stand in the kitchen al day since I'll have to clean my apartment as well.
But I would really use some help, cuz my head feels totally blank.

Also, if you have a good recipe for buns that would really help as well.

Have to take the opportunity to say that I really love this community!!
Al of your recipes are so inspiring =) has really been a big help in me going vegan.

spring has finally arrived in Ontario and i am itching to barbecue.
does anybody have any easy/ home made ideas?
(i can't eat store brought veggie burgers because i am allergic to onion)
