(no subject)

I am sooo stuffed... I just ate a metric assload of the following, cooked on the grill:

Shishkebab-style brushed lightly with garlic olive oil:
Red peppers
Zucchini
Baby 'bellas (shrooms)
Tomatoes
Potatoes
Eggplant
Garlic
and... Portabella Mushroom Steaks <3333
and grilled pineapple for dessert ^_^
with some fresh lemonade...
ate outside for the first time this spring :D
oddly... I ate an obscene amount of the stuff listed above, but I don't feel overstuffed, just satiated. *happy* I guess the "stuffed" feeling only comes when you eat unhealthy stuff.

I wanted to take another picture after cooking but disappeared too fast for the camera...*looks innocent and licks lips*

of course my dad comes outside while I'm cooking the dinner, looks at the yummyness cooking and asks "where's the beef?" and then starts bitching "I don't think I can eat that.." so he went inside and had like..frozen spaghetti (with meatballs of course) egh. my mom at least half-understands veganism...(she keeps trying to sneak me dairy and nonvegan stuff because she thinks I need it)

Okay, so somehow my husband randomly came home with a whole coconut last night.... My problem is, I have no idea what to do with the damn thing. So my question is: how do I crack open a coconut and what do I do with it once I have it cracked?

BTW, I tried out a chocolate cake recipe with carmel/coconut frosting tonight. If it's good, I'll post the recipe later! ^_^ (different coconut, lol)
