vegan wedding buffet

hello vegans!

My fiance and i are having a vegan wedding...well as much as we can, but if someone offers to bring something we wont tell them not to because it isn't vegan. Our wedding isn't going to be some big crazy fancy thing so we are just making out own food. Everything we will make will be vegan, including the cakes! here is what i have come up with so far, obviously we aren't chefs. This is kind of a simple soup/salad kind of deal. The more simple things are the better as we will be so busy with things other then food.

Soup (kept warm in a crcok pot)- we'd love to figure out how to make a really yummie carrot ginger soup.
Garden salad- with the usual deal, we will offer vegan dressings too
Pasta- perhaps a cold tri-noodle pasta salad
Finger rolls- we were thinking of getting finger rolls and putting tofurky oven roast slices in them. I wonder though if non-veggies will enjoy this? It has been over a decade since i last ate meat so i can't remember.
Cookies- i make really good vegan chocolate chip cookies
Guacamole with chips, humus veggie platter
Fruit salad

and for drinks,
coffee, tea, newman's own lemonaid, a a big bowl of punch.

and we are making two vegan carrot cakes with ivory frosting.

What do you think? Is something missing? Do you have a good recipie we could use?

CRUNCH TIME

Shit. I've got an hour to make dessert for seven, and these are the ingredients I have...

- Flour
- Sugar
- Baking powder
- Soy milk (plain, chocolate and vanilla)

Oh yeah, and margarine and cocoa.

And, ah, I think that's pretty much it. HELP ME.

Quick advice on fiddleheads?

I've never eaten fiddlehead ferns before, but I bought some at the farmers' market today. I'm making dinner, which was to have been mashed potatoes with greens (chard) and mushroom gravy, but now I'm wondering if the ferns would be a good sub for the chard. Sound good, or should I do something else with them?

Mix of Greens

I looked through the memories on this one, but nothing really caught my attention. I received two big bags of mixed greens (2 kinds of mustard greens, kale, and chard) today through my work share at a CSA, but I don't know what to do with them! I've never even EATEN greens before (so I don't even know what they taste like), so any tasty suggestion would be appreciated. Thanks! :)

indian vegan/vegetarian cookbooks

i am looking for a good indian cookbook, preferably with mostly vegan recipes.

i have stumbled across these on amazon:

Lord Krishna's Cuisine: The Art of Indian Vegetarian Cooking
by Yamuna Devi (it says many of the recipes in this are not vegan)

&

Classic Indian Vegetarian and Grain Cooking
by Julie Sahni

does anyone have either of these and really like them? or could someone recommend a better one?
thanks.
