This is quickly becoming one of my favorite communities. First time poster here, but I've been lurking for days now.

I made the following last night. Just kind of threw it together, after getting in the mood for both something spicy and baked potatoes.

Well, onto my little recipe:

Salsa 'burger' potatoesCollapse )

This was a hit last night, and I figured I'd share and simply take the opportunity to post about how wonderful I've found this community since I began lurking and finally joined. You guys and some of the things you make are really inspired/-ing. :)

(The memories aren't working, and I haven't quite figured out tags yet. Can someone help properly tag this thing for the index?)

I want to make supper flaky, melt in your mouth, restaurant style vegan biscuits. All the recipes that I've tried have been a little disappointing, not horrible, but not fantastic either.

Any suggestions? I'd be much obliged.

Thank you kindly.

what would you do with a pack of sliced tofutti vegan cheese?

I bought it and tried one slice but had to throw it away it tasted so bad. I can't really take it back to the store cause the package is already opened. I would mail it to one of you but it would spoil!

Could I maybe just cut it up and make a mac and "cheeze" with it?

What would you do if you were me? I am uncomfortable with throwing it away (well that wouldn't be very vegan of me either heh)

thanks for all your help!

Help with cheesecake!

Here's my cooked cheesecake under the cut. I want to finish it tomorrow morning but I think there's something wrong. Take a look at the pic and tell me if this is normal:

Edit:
Thank you for your help. I let it cool a bit, put it in the fridge and this morning it shrink down to a managable size. It still seemed like a lot of mixture for a 9" pie/cake. I am glad i didn't use 4 tubs of tofutti.
Now it's super firm, almost hard to the touch.
I can't wait until I can try this thing so I can stop worrying about it!

anyone ever found that tofu, just your basic organic firm tofu block, doesnt settle well with your stomach? it seems no matter how i prepare it, and even when it is just rinsed and sliced for putting in my summer rolls my stomach just doesnt handle it well. does that seem like more of a medical reason to not have tofu or a personal reason? is an upset stomach and digestion stuff my body telling me not to eat it or just ..?

in the past i'd always written this off as preparation, but i will face the fact it isnt. i always rinse and drain it.. it seems so nuetrel i cant hardly believe it would be.

other than that, my main reason for bringing it up is i am concerned about not getting enough protein if i try and go sans tofu for a bit. i eat soy in one form or another quite often.

bah humbug.
