Pineapple & Mango Salsa

Hey all...this is my first recipe to share here....I hope you all like it. I just made a batch of this today to take with me as one of my two contributions to my friends' fourth (err..THIRD) of July party. (I won't post the other here, for it's not vegan, sorries.)

Pineapple & Mango Salsa (a la Lauren) ;)

1 Whole Pineapple
1 Ripe Mango
1 Bundle fresh Cilantro
1 Fresh Jalapeno Pepper
1 Can of Black Beans (Rinsed and Drained)
Juice of 1 Lime
Salt and Pepper to Taste

OK...it's really easy to put together.

Basically, we've all seen/eaten salsa, so we know that you can make it as chunky or as smooth as we like...I will let that up to you. So, chop up the ingredients to your desired size and mix together well. Add the salt and pepper at the end, using sparingly at first. Why? Flavor intensifies over time.

Also, I recommend (as I have done) making this at least 6 hours ahead of time...or even the day before. Why? The flavors will blend themselves together tonight making the overall finished product much tastier!

Anyhow, as I said, this is my first time to share here. So, I hope you try this one and enjoy it!

peach cake

i've been cooking alot this weekend. tonight i made peach cake using this recipe from vegweb. i used a little more soymilk + some oil cos the batter was really dry & also i think it could've used less sugar. but it turned out pretty ok, even my non vegan housemates said it was good haha.

Nacho cheese?

I'm having a terrible craving for nachos and cheese, but I don't know of any good nacho cheese substitutes that DOES NOT contain nutritional yeast. I've never liked nutritional yeast and haven't been able to keep it down since I got pregnant, so it's not an option at all. Any suggestions before I give in and buy Tostitos nacho cheese?
