Semolina flour recipes

I checked the memories and didn't find anything, but point me in the right direction if I missed something:

Does anyone have any semolina flour-based bread and/or pizza crust recipes? Just about everything that came up w/ google required a bread machine (which I don't have) or 4 other types of flour in addition to the semolina. I have regular wheat flour and such but any other specialty flour would require a drive back to the health food store (which is a good 40 minutes away). Any help would be most appreciated.

Coconut Cream Pie ~ No Oil Possible?

My parents are coming over for dinner tomorrow and my mom requested that I make her my vegan coconut cream pie from How It All Vegan. I'd like to figure out a version that my dad can eat too. Due to health issues (gallbladder), he can't eat oil or hardly any fat at all. He's vegan already, in case someone was going to suggest that. :) Anyway, the recipe calls for half a cup of safflower oil and I'd like to replace that but have no idea how. The rest of the ingredients are just tofu, coconut, sugar and vanilla. Any suggestions? I found an oil-free pie crust recipe on fatfree.com. Does this sound good or does anyone know of a better tasting one?

1 cup sifted plain flour
1/3 cup light corn syrup (I'd probably use mayple syrup)
2 tabs rice milk
3/4 teas salt (optionsl)

Mix flour and salt. combine syrup and milk and add all at once to the
flour mixture. Stir with a fork until thoroughly mixed Roll out dough
between sheets of waxed paper lightly dusted with flour. Makes enough
for one crust.

Introduction (& Berry Tart)

Hey all,
I went vegan three months ago (after two previous failed attempts at vegetarianism in my teenage years, I've finally become serious about this issue). I greatly enjoy creative vegan cooking, and I must say that this community has a very comprehensive collection of recipes! Now that I have access to a kitchen & the Internet again (I'm currently travelling across the US), I've been trying a new recipe every day.

Here's a recipe I found elsewhere & veganized. (I looked for it in the Memories first, but didn't see another version; pardon me if I've overlooked it, though.)

Ice cream cake

Hello, Before I went vegan I used to have a baskin robins icecrema cake every year on my birthday. I wanted to try to make a home made Ice cream (soy of course) day this year. Does any one out there know how I would go about doing this?

lemon bars

I'm making lemon bars today! there's one recipe in the memories that's called "infamous" lemon bars--can anyone attest to the true infamy of this one, or have a favorite lemon bar recipe of their own to share? I'm actually making raspberry/blackberry lemon bars, but I don't think this makes a difference. thanks so much!

Tofurky Roast

I haven't tried the tofurky roast and was wondering if anyone had. I'm thinking in advance for Thanksgiving dinner at my mother's home and my husband and I don't want to be stuck with eating only green beans.

I just want to get a feel for the taste and also if it freezes well enough to keep left overs.

Ramen noodles

Hello, this is my first time posting here, and sorry if someone else has already asked this question, but the recipe index isn't working.

Recently my mother went to Costco, and she bought Maruchan brand ramen in bulk, forgetting that the soup packets contain beef extract. Now we have those boxes lying around the house and I would really love to cook some noodles. Does anyone have any vegetarian/vegan ideas or recipes that I could use with those noodles? Also, it would be nice if they were somewhat low in sodium, if it's not too much trouble.

Lasagna

1st Post...

Hey folks. Longtime lurker. I love the recipes! I'm not a vegan, but I mostly eat vegan dishes when I'm at home and I usually cook vegan- more and more lately. It's a nice challenge and makes me feel good. I'm about to attempt my 1st vegan lasagna and the memories are down. I have a huge eggplant, some wheat noodles, a box of mori-nu silken firm tofu and some marinara. Now what? What else should I add? How do I make the tofu ricotta-ish?

I could really use your advice and suggestions!!

Unfortunately, the memories are down.

I was just wondering what are some of your favorite cheap dishes to bring to a potluck? It also needs to be something that omnivores will enjoy. I usually make the rice crispy treats from how it all vegan, but I'd like to try something different this time. Thanks!

Cake opinions?

Hey guys! I'm making a cake soon...It will be like a pineapple upside down cake, except that instead of taking it out of the pan, I'll just leave it in there and frost the top.

Here's the idea:

The bottom layer, is of course, pineapple chunks and a thick gooey caramel sauce (which I'll acheive hopefully by mixing a bunch of brown sugar, margarine, and pineapple juice together).

The cake itself will be an ordinary cake mix, but instead of making it with 1 1/4 cups water, I'll be using 1 1/4 cup pina colada juice.

The frosting, I haven't picked a flavour yet. Either vanilla, pina colada, or rum flavour. Then I'll top it with toasted shredded coconut.

Okay here's the decision: I'm torn between two ideas for egg replacer. One is simply using King's Mill Egg Replacer powder...the other idea is to mash up a banana, and use the banana (in addition to a bit of the egg replacer powder). So....should I use a banana? Yay or nay? I think the extra fruitiness might be fine, but mum thinks it might detract from the overall pina colada theme I seem to have going on with it.
