Lentil or Black Bean recipes?


I checked the memories first, but they're down right now so...

I'm looking for an easy recipe for either lentils or black beans. I have them both in bulk, but no good recipes. I know how to cook them, but I don't know of any way to season them (the taste isn't the best without seasoning of some kind). I got a rice cooker the other day, so I'm looking for something that will go well with brown rice. Any suggestions will be appreciated.

Fudge that firms up?

I can't access the memories right now, and even then I'm not certain I'd find what I'm looking for... so forgive me if this subject has been discussed to death already!

I need some advice, and possibly a recipe. I want to make some chocolate fudge tonight or tomorrow, but I can only make it once (lack of ingredients) and I really, really, really want it to be firm like regular fudge! The last time I made fudge I wasn't vegan and I did use butter, and it never hardened. I would imagine that it's even more difficult to make a firm fudge using regular (vegan) margarine, which is all I can get.

I also won't be using agave nectar, because I can't get that either. So... do you have

a.) a better recipe that you have tried, which uses regular margarine, or

b.) tips on making firm vegan fudge? Would I be better off using powdered sugar?

Soft fudge is very nice, and it makes good truffles as well as an excellent filling for home-made chocolates.... but that isn't what I want. I want firm fudge!

Black Bean Salad/Salsa

Is it a salad? Is it a salsa? Who the heck can decide?

Y'all'll need:
2-3 ripe tomatoes, diced
1 large bell pepper, diced
1/4 red onion, diced (or to taste)
1 can black (turtle) beans, drained, or 1 1/2 cups or so cooked black beans
2 cloves of garlic, minced
minced fresh cilantro to taste
(finely chopped spiced olives and marinated artichoke hearts - added just 'cause they were there)
juice of 1/2 a lime
a few dashes hot sauce

Mix it all together in a big bowl and adjust as you see fit. My avocados are rock hard, or else i would have thrown one of them in as well. When it's ready, scoop a bunch of the salsa over a healthy bowlful of shredded lettuce, stir it up and enjoy!

If you served this over tortilla chips with guacamole, it would make the most amazing vegan taco salad EVER.
