a brief introduction complete with pancake recipe!

hey everyone =]

i'm suzi and i'm slowly working my way over to the dark side, heh. i've been a vegetarian for about a year and a half or so and now i'm easing out eggs, dairy byproducts, etc. (i don't drink milk it's gross.)

i work a lot and i want to keep eating healthily so i'm starting to bulk cook things to have on hand. today i made pumpkin muffins and a great cashew sauce that ya can put over rice noodles or brown rice and veggies, etc.

i also found the following recipe in the Vegan Delights cookbook by jeanne marie martin. it's an older book from the early 90s, but it has a lot of great content in it aside from recipes. she includes nutrition, substitutions, explains different kind of oils to cook with - ya know, basic cooking stuff.

so yea, here is an AWESOME pancake recipe. i just stuffed myself with a large stack of them.

whole grain pancakes

serves 2

3/4-7/8 cup apple juice

4 tsp. vegetable oil

1/2 cup whole wheat flour

1/2 cup "light" flour; i.e. unbleached white flour or whole wheat PASTRY flour

1/4 cup arrowroot powder

4 tsp. baking powder

1/4 tsp. sea salt

sift together all the dry ingredients. in a separate bowl, mix the oil and juice. pour over dry ingredients and mix well until lumps are scant. slowly add more juice if a thinner consistency is desired.

heat a well oiled pan over medium heat. pour pancakes to desired size. pancakes are ready for first flip when bubbles appear in the middle of each cake and edges are dry. flip and cook for another 30-45 seconds. flip again if desired.

voila! seriously. they're awesome. hungry jack ain't got nothing on these!


Strawberry Frosting?

I'm going to be making a cake, and would like to make strawberry frosting for it. No such luck yet, I'm not sure about veganizing a recipe either, since I'm not really sure what would happen if I used EnerG to replace the egg whites? And I don't really know, could I just add strawberry puree instead of lemon in this recipe?

Any help is appreciated, it's going to be a big cake so I'd prefer not to "wing it" since I probably won't remember how to make it if I need a second (or third!) batch.

recipe idea opinions

ok, so ive been craving a stroganoff type of dish and i was wondering if anyone can see any glaring problems or suggestions for this recipe im thinking of:

for 1 person-
1/2 c 'sour cream' (im using tofutti brand)
2 T earth balance
2 cloves garlic
about a t of onion powder
dash of pepper
rice milk to thin it out

crumbled boca burger
1/2 c mushrooms

im planning on heating everything except the sour cream over med heat and then adding the sour cream at the last 5 min and eating it over noodles... ive never ever tried to cook with tofutti sour cream before and its been years since ive had stroganoff so im kind of hesitant...

Cake: Vegan vanilla cake mix made with Kings Mill egg replacer
Icing: Vegetable shortening, powdered sugar, vanilla, water, Wilton food colourings (which are vegan)...Oh and I used cocoa powder to make the chocolate icing for the shoes and outlines. The pupils are dark chocolate wafers.
