problem with cakes when using egg replacer?

the other night i tried to make a cake for a friend using a store-bought cake mix and just adding oil, water & egg replacer like the package says to do

i used ener-g egg replacer and the cake came out really weird. it was super flat and didn't seem to yield near as much cake as it should have (it was barely 1/4" thick when covering the bottom of a 9x12 pan)

after telling my friend what happened, she said that's happened to her the 2 times she tried using ener-g egg replacer in a store-bought cake mix.

i made a cake for someone in the past using mashed bananas as the egg replacer and it came out fine.

anyone have any cooking tip insights for me on this?

Citrus BBQ Tofu.

2 packages firm tofu, drained and rinsed
2 tablespoons extra virgin olive oil
1/4 cup minced red onion
1 clove garlic, minced
1/4cup unsweetened apricot jam
1/4 cup fresh squeezed orange juice
2 tablespoons maple syrup or brown rice syrup
Zest from one orange
1/4cup water
2 tablespoons prepared mustard
1 tablespoon apple cider vinegar
_1/2teaspoon coriander
1/2 teaspoon sea salt
1 teaspoon fresh grated ginger
1/4 teaspoon garlic powder
pinch cayenne powder

but I made some changes:
I put the tofu on the grill- which I had brushed with olive oil so it wouldnt stick. I didnt use any onion, jam, or mustard. Instead of soy sauce I used hot pepper dumpling sauce(which is sweeter than the bitter taste of soy, and this one was of course spicier), fresh rosemary instead of coriander. I also poured on the marinade as it cooked, and added a bit of salt.

sugar cookies

I really want to bake some sugar cookies but I have no vanilla and it seems that all sugar cookie recipes have vanilla. Any recipes without vanilla or replacement suggestions? Thank you!

Edit: I thought I should mention that I just have the basic ingredients, as I just moved on my own to my own apartment. I have: flour, sugar, soy milk, margarine, baking powder, salt.. those things. Now I know I need vanilla for those late night sugar cookie cravings :)

Pumkin Pie?

I've got a quick question - does anyone have a really yummy vegan pumkin pie recipe? I made the one from "How It All Vegan" a while back, but it came out kinda.....bland....

I'm not sure what else to put into it to give it that "kick" that I remember from pumkin pie as a kid. Any ideas?
