hors d'oeuvres

So, I checked the memories and couldn't quite find what I was looking for.

Earlier this morning my Dad came to me and said; "Do you have any recipes for hors d'oeuvres (Like snacks, only fancier) that could be easily transported onto a sailboat and consumed by non-veg Adults, while drinking wine?" And I couldn't come up with much.
He said any kind of dips, fruit, something with crackers, but I'm honestly pulling no ideas out of my head.

My first idea was Hummus, but not Fancy enough, and I know he'd cringe at that Idea.

So, if anyone has ever done anything fancy, or know of anything that could be eaisly prepared, and still be upperclass, We'd both love you forever, thanks!

I scored a huge bag of organic, homegrown beets tonight.  Whatever shall I do with them?  Borsch does not appeal to me, unless it's really unique and not very borsch-like.  I also have yellow squash, broccoli, carrots, kale, tofu and a whole host of organic grains. 

So many beets, so little time!
