Blueberry Pancakes

  • 1 c. flour
  • 2 T. sugar
  • 1.5 t. baking powder
  • 2 T. baking soda
  • 1/2 c. blueberries
  • 1.25 c. soy milk
Seriously, this is easier than my old roommate: mix all ingredients. Pour by the half cupful into a pan that was heated at medium (I used vegan butter to try to ease the sticking). Once the top is bubbly, flip the pancake over. Let the other side cook for a minute or two. Try to remember if you're cooking for other people, so that you don't eat the products as they come off of the pan.

I had only one problem with these, and I'm wondering if any of you can help: the blueberries would stick to the pan. I tried using more butter, but they still stuck. Would this still be the case if I used cooking spray?
