In the pantry

This may seem like an odd sort of post, but I've just been stupidly stumped trying to write a shopping list. I haven't any particular recies in mind, I was more trying to buy up a whole lot of stuff to stick in the pantry that could be used to make a fair few different meals. The sort of things you should keep handy, just because you can always use them in something.
So, what nick-nacks do you stock up your pantry with, just to use on hand? What do you use them for?

autumn goodness

pumpkin spice muffin recipe:

* 1/4 cup non-hydrogenated vegan margarine (i use vegetable oil)
* 1 cup brown sugar
* 2/3 cup applesauce
* 1 can of pureed pumpkin or squash (or you can use about 1 1/2 c of fresh)
* 1 teaspoon cinnamon
* 1 teaspoon nutmeg
* 2 1/2 cups whole wheat flour
* 2 teaspoon baking soda
* pinch of salt

Directions:

Preheat oven to 350
grease muffin tin
(This recipe makes about 12-16 muffins.)
Cream together margarine and brown sugar
Add applesauce, pumpkin, and spice
Mix well and add flour, pinch of salt, and soda
Fill muffin tins to the top (these rise but not as much as non-vegan versions)
bake for about 20-25 minutes
