Add blackened tofu, caesar dressing, then croutons and a little more black pepper. I didn't take photos when I first tried it(saturday for lunch) but I had leftovers last night for dinner and it was even better. These pictures from from last night. i adapted this recipe from 'how it all vegan', its almost exactly the same but cut down and some things are added:
1/2 cup whole wheat pastry flour -you can use white or some other type 1/2 cup rice/soy milk 1/4 t baking soda 1/4 t baking powder 1/2 T oil dash of cinnamon, nutmeg, vanilla to taste
mix all dry then add all wet ingredients. mix until just mixed and cook in a lightly oiled pan over low-med heat. if youre using whole wheat flour it wont bubble like normal pancakes do, wait until the edge start to firm up and then flip over, white flour will bubble just like normal.
I picked up a new cookbook the other day, and I really like it so far. It's 'Fresh From the Vegetarian Slow Cooker', by Robin Robertson. Not every recipe is vegan, but a good many are (the majority in fact, I think), and for most of the ones that aren't she offers substitutes. I do love to use my crock-pot because of the convenience factor, but I had been stuck deep in a chili/stew/dal rut. This book is definitely lifting me out of that rut (I made this today and was very pleased):
