An Accidental Holiday Recipe

I went to make pancakes yesterday morning and realized too late that I didn't have enough soy milk. In a flash of laziness/not wanting to go out in the snow, I realized I had a full carton of soy nog. So, yes, you guessed it: I subbed the soy nog for soy milk and holy moly! They were probably the most delicious pancakes I've had in a long time. I did about half soy milk, half soy nog yesterday. Today, I tried it with just soy nog and they were even better! I ended up eating them without syrup or anything.

Half Moon Cookies

I made moon cookies! Partly in honor of the full moon last night and partly for a Christmas party I'm going to tonight.

I got the recipe from here and veganized it. The measurements from the original recipe are kind of funky and I ended up just kind of winging it and adjusting a little because I was a bit short on Earth Balance (oh no!) and I also mixed the dough 2 days before I baked them so had to add a little splash of soymilk to moisten them up as they had dried out quite a bit in the fridge. A little unorthodox, I know, but they came out yummy! My dad said they remind him of something his mom used to make, so I think they have some kind of European roots.

Half Moon Cookies
1 cup "butter"
7.5 tbl ground walnuts
4.5 tbl white sugar
2.5 cups all-purpose flour
1.5 tsp vanilla extract

1. Preheat the oven to 325 degrees F
2. Cream the butter and sugar together and mix in the vanilla extract.
3. Food processor up enough walnuts to produce 7.5 tbl of ground walnut
4. Mix the ground walnuts in with the butter.
5. Add the flour slowly, and be sure not to add too much. (I didn't use the full 2.5 cups) The dough tends to be rather crumbly.
6. If you let it sit in the refrigerator for 2 days like me or if you added too much flour, add a splash or two of soymilk until the dough sticks together well enough to shape.
7. Take approximately tablespoon-sized amounts into your hands and mush into half-moon shapes.
8. Put on ungreased baking sheets and bake for about 15 minutes or until tops are semi-hard to the touch.
9. Roll in powdered sugar immediately after removing from the oven and enjoy!
