lecithin substitutes?

what can be used as a replacement for one tablespoon of lecithin granules in a muffin recipe? is this equal to replacing one egg (with ener-g)? I have no experience using lecithin, but am pretty positive it's used as an emulsifier. what else could I use?

I don't have to work today, so I'd like to bake. these muffins sound like a good candidate.
