Sweet and Sour Tofu

Sweet and Sour Tofu

Cut half a block of firm tofu into bite size blocks. Stirfry it in a wok or frying pan with some nonstick cooking spray until slightly browned/cooked.

Take the tofu out of the pan. Add to the empty pan - half a chopped white onion, two handfuls of chopped red and green bell peppers, and some canned diced or cut pineapples with juice. Cook over medium high heat and simmer until juices are reduced.

Add the tofu back into the pan, plus some sweet and sour sauce. [I used approx 4-5 oz]

Serve with hot rice.

Cheezy Cheeze Burger Pizza

I think the thing I miss the most about my non-vegan days is pizza. I've been avoiding it because I haven't been able to find a "cheese" I like, but those days are over. This recipe is a modified version of "The Joint's 'Cheese Burger' Pizza" from La Dolce Vegan by Sarah Kramer.

Cheeze Burger Pizza
1 Pizza crust
3/4 Cup tomato sauce
2 Cloves garlic, minced
1 Cup mock ground "beef" (I used Morningstar Farms Grillers)
1 Cup vegan "cheese," grated (I used Tofu Rella cheddar style)
Vegan parmesian "cheese", to taste

Preheat oven to 450. Place prepared pizza crust on baking sheet (I used a pie pan because I like my crust deep dish). Spread tomato sauce evenly over crust. Saute the "beef" and the garlic until cooked. Spread "cheese" evenly over crust and top with "beef" and garlic mixture. Top with the parmesian "cheese". Bake 10 minutes. Let cool five minutes before cutting and serving.

Here are the things I omitted from the original recipe which you may wish to include:
1-2 Pickles, thinly sliced
1/4 Small onion, thinly sliced
2 Tbsp - 1/4 cup prepared mustard

And I added the garlic and parmesian "cheese".

I hope this satisfies your pizza craving as well as it did mine!
