dried beans

So quick question. I just got some dried beans and I've figured out the whole how long to soak & cook and whatnot...but my question is, if a recipe calls for x-amount of "cooked beans", is there any difference in the dried vs. cooked amount? For example, if a recipe calls for 2 cups cooked and I start out with 2 cups dried, will I end up with "more" cooked beans than I need?

coconut date rolls

a good friend of mine got me completely hooked on coconut date rolls and, after much pestering and life threatening, handed over her recipe. i couldn't believe how simple it is - makes me pretty much feel like a fool that i couldn't whip this up on the fly:


2 cups fresh dates, pitted
1 cup unsweetened shredded coconut

Run through a food processor on 'pulse' until they look sort of thick but creamy. Pull out handfulls (about three tablespoons? Give/take) and roll them into logs about 1 1/2 inches long (or however long you want them, or balls. I mean, I'm sure you could make date balls and it wouldn't be a big deal. You get the idea.), then roll them in the shredded coconut. Refridgerate and, once firmed, devour. They'll last about a week.


these things are insanely addicting, so be warned. i was wondering, however, if anyone knew where in the crap i could get fresh dates from? i live in the south burbs of chicago and i can't seem to find anything other than the dehydrated kind. help?
