Raw "cheese"?

Due to some over-the-counter talks at the farmer's market, I've been reading up on raw foods. Does anyone know about raw "cheese" and rejuvelac? The fact that it involves fermentation makes it seem that much closer to real cheese than blocks of mashed and flavored tofu. Here are the links I've found to raw "cheese" and rejuvelac:
