salsa pasta salad

last night i made some salsa, and this morning i had a stroke of genius and added bowtie pasta to it and now it is marinating in the fridge for lunch. i tried some and it was really tastey.



yesterday i had about 5 or 6 tbsps of the salsa on toast for lunch, i put in about… 1,1/2 cup of bowtie pasta into the rest of the salsa. i can't wait to eat it. unfortunately i don't have my camera with me so there is no picture, but you'll have to take my word that it's pretty and colourful!

Baked Tofu?

Hi,

Does anyone have a favourite recipe for baked tofu? I don't know what exactly I have in mind.

I often marinade extra-firm tofu in a tamari/garlic type marinade and then fry it, but I'd like something a little less ... oily and heavy. I've tried recipes for "crispy" tofu (with cornmeal) that really didn't turn out very well at all, and neither did some "fish" sticks (but then I've never liked fish anyway ...)

Anyway, I'm interested to hear how you prepare your tofu!

Cookbook with pictures?

So I was at the bookstore today looking at the vegan cookbooks and there are not very many with pictures. Anyone have any great vegan cookbooks that show the finished products? I am a very visual eater and I like to know what things should look like before I try it....I'm just weird that way I guess. I did look in the memories but I didn't see any picture related cookbook discussions. Also I have a ton of vegetarian cookbooks with pictures, but I thought since I have a gift card to use up I might be able to get a vegan one also. Thanks!

Okay, to the real question:

I have a friend who is currently on the brink of becoming vegan. He is very proud of his Italian background and I'd like to make something for him that's:
+distinctly Italian (not pasta)
+vegan (of course!)
+portable (I have to take it on the bus or on my bike)
