I tried quinoa for the first time today! Yippee! Seriously, I just used it as I would normally have used brown rice, underneath a sweet potatoe-y stew and it was great, but I was wondering about some other ideas for using it. Of course, I thought of substituting it for rice and couscous in recipes, but what else do you guys do with it?
I'm throwing a small dinner party on Saturday. For the main dish, I'm planning on serving a variant of this lasagna. I also plan on throwing together a spinach and avocado salad, but aside from these things, I'm stumped. What (lightish) appetizers would go well with lasagna? What about dessert?
I have a big block of extra firm tofu and a ton of whole wheat flour I need to use up. They don't need to be used in the same recipe....what can I make that doesn't involve too many exotic ingredients? Currently playing the "Use Up All My Food In the pantry Before I Go Back to College" game.
