Beet and Spaghetti Squash Salad

Hello, this is my first time posting here... thought I'd share a salad recipe that I make. I was going to take a picture of it, but my camera phone isn't the greatest, and made it look brown and weird, when it's really magenta...

2 beets, peeled and cut into matchsticks
2 cups spaghetti squash
all the squash's seeds, toasted
1/2 c. red onion
1/2 c. kidney beans
1/4 c. scallions
1 T. balsalmic vinegar
1 T. dijon mustard
1/2 T. olive oil
1 clove garlic, minced (or shallot)
salt, pepper, and rosemary (or whatever herb you like)

[Lentil, Mushroom Barley Soup] request for favourite soup recipes

Today my mom and I are going to be making soups so I can take home a bunch to my on-uni-campus unit and be fed for weeks. These ones are my favourites to make [they are a 'given' on soup days], but I was wondering whether anyone had any treasured all-time favourites to share since we're heading into fall over here.

Native American dinner

I have the opportunity to cook dinner for the Native American house at my school. I, however, do not know what to make! The menu doesn't have to be Native American food, but it needs to satisfy hungry meat lovers (and a lot of them too). I was thinking about the chili from How it all Vegan and maybe cornbread, but what else goes with that? I was also thinking something like fajitas because then there could be a meat component separate from everything else (that someone else can cook). Right now fajitas sound easiest, but I don't know if I can track down vegan tortillas. Anyway, I'm completely open to suggestions right now and if anyone actually knows of vegan Native food that would be pretty cool too.
