refreezing ice cream

I've been thinking of ways to make different flavoured ice creams such as cookies and cream or cookie dough, by softening a tub of vanilla soy ice cream, mixing through crushed oreos or cookie dough bits, then throwing it back into the freezer to firm up.

can anyone predict any problems with this? my main worry was the ice cream becoming frosty when refreezing...
