Southwestern Pumpkin Soup

This soup was delicous!!!  I highly recommend--it gives that spicy kick to an otherwise sweet soup.  It was easy, and made the house smell just like fall.

2 tbs olive oil
1 large onion, chopped~~about 2 cups
1 jalapeno pepper seeded and chopped
2 garlic cloves, minced
5 cups vegetable broth
1 large baking potato, chopped. (I used sweet potato instead, and want to make it again substituting with cauliflower)
1 1/4 tsp salt
1/2 tsp chilli powder
1/2 tsp ground cumin
1 (15-ounce) can pumpkin
1/4 cup cilantro
2 cups unsweetened soy milk
3 tbs fresh lime juice

In a large pot, sautee onion, jalepeno pepper, and garlic about 15 min.  Add vegetable broth, potato, salt, chili powder, and cumin.  Cook, stirring often, for 30 minutes, or until potato is tender.  Process potato mixture with pumpkin and fresh cilantro in a blender until smooth (I had to do mine in two batches).  Return to pot  and simmer for 10 minutes.  Stir in lime juice and garnish with cilantro sprig.

Tag! - You're It!

Yes, it's that time again - time for me to remind you that tagging your entries makes it easier for you and others to find information and recipes in the community. I've noticed more people tagging than ever there used to be, and to them I say a heartfelt "THANK YOU!" I've been away from the community for most of 3 weeks, and will be back to tagging the untagged next week, but 3 weeks worth of posting means there are a lot of untagged posts. I also see some "new faces", so here's what tagging is and how it works:

When you've posted an entry to the community, your successful post page will show you an option for editing the entry tags. Click on that, and your entry will pop up. Underneath it, you'll see a long list of tags you can use to describe your entry. You choose the tags by clicking on them; hold down the control key to click on multiple choices. You can do this long after you've posted, too - if you wanted to tag every entry you've ever made in this community (or any other), you can simply go through your entries and click on the edit tags icon next to the edit entry icon.

When you want to ask questions about tips, techniques, or particular recipes, you can go to the community's Recipe Index & FAQ by clicking on the link at the top of the page, or by clicking on the relevent tags at the right-hand side of the page. You can also go to the community info page by clicking on the link at the top of the page to read the community guidelines and use the community search engine.
