Joy of Cooking favorites

I've always valued the Joy of Cooking for its great recipes and tutorials explained with fantastic style. I've just used it in other kitchens and haven't invested in a copy for myself. However, I just checked the 75th anniversary edition out from the library. I went right for the bread section because I love love love their bread recipes, especially pita bread. Also, the stroganoff recipe is very good with substitutes. I'm trying to find other pages to copy before returing the book. 317, with tofu burgers (you can make into a loaf like meatloaf) and root vegetable and seitan stew look promising.

Anyone have any suggestions for favorite recipes?

veggie chana masala

i made this 2nite and it was quick and delish.. took about 15 mins to make.

1 large clove garlic
1 tbsp curry power
1/2 tsp salt
1 med onion, chopped
chopped carrots, as much as you want
brocolli, as much as you want
1/4 tsp black pepper
2 tbs olive oil
1 can chickpeas ( save 3 tbsp of the chikpea liquid)
1 tbsp vegan margarine


in a pot cook the onions and carrots till tender. Then throw in everything except the margaine. stir everything around.. when everything seems cooked ( tender), melt in the marg.
Serve over rice.


PS.... my mom loved it, but then got all concerned about whether its safe to cook w/ margarine. your thoughts??
