ramen and spicy mustard tofu!

I just made this real quick for lunch, and it was delicious!
we always have those extra little packets of sauce from chinese take out, so i decided to use them for my quick lunch!

1 package ramen noodles
soy sauce
2 packets spicy mustard

I cut up some (about 1/3 brick) extra firm tofu and placed in a bowl with 1 packet of spicy mustard and some soy sauce, just enough to cover the tofu.

Then I cooked the ramen noodles, adding soy sauce, cumin, ginger, and a packet of spicy mustard to the water to create the "broth" and after the noodles were done, I threw in the tofu and the maranade all into the pot and let it heat up.

That was it.

I'm sure this would be super delicious with some stir fried veggies and browning the tofu that way, but I'm a fan of it just heated up.

Swiss Roll

I've not made a Swiss roll in mmmpphh! years - certainly not for over a decade, but I'm consumed with the desire to make a Yule log to take to my parents' house (along with mince pies, Viennese shortbread dipped in chocolate, vegan After Eight mints, and ginger cookies) at Christmas.

Does anyone have a tried and true recipe for vegan Swiss roll? I'd be eternally grateful.
