I just had the best salad of my life, and I had to post the ingredients.
falafel, cooked, cooled, and crumbled
corn (mixed yellow and white)
extra firm tofu, cubed
toasted sesame seeds
and roasted red pepper dressing
The falafel was left over from last night. I grabbed it as an afterthought, and HOLY WOW was it good.
I made this tonight and it turned out wonderful.
1/2 yellow onion
4 cloves garlic
1 head of broccoli
1 veggie bouillon cube
32 oz container of veggie broth
6 cups water
3 cups quick cook rice
3 tbsp vegan basil pesto
seasoned with black pepper, red pepper flake, salt, nutritional yeast (sorry no exact measurements for these)
Saute onion and garlic in soup pot with a little olive oil. Add black pepper, red pepper flake, salt, nutritional yeast, pesto, and bouillon cube. Once onion is translucent add veggie broth, water, broccoli, and rice. Bring to a boil then let cook down until nice and thick (about 30 minutes). Enjoy!
