Spelt bread

Yay spelt! Americans seem to think that spelt is some bizarre engineered grain for people who can't eat wheat. Europeans typically know better. Spelt is delicious and has been around for ages.

Since I'm still very much in love with my new grain mill I made spelt bread today. I only put the grain through the mill once, so it has much more texture than it would otherwise.

Bread! Baked 10 minutes at 500F, then 20-30 minutes longer at 350. And yes, all the buckwheat does just fall off when you cut it. I think I'll try glueing it on there with a flax wash next time.

[remarkably simple] Maple Walnut Cookies!

my mother claims these to be the best cookies i've made, to date..can't say i could disagree

1 c flour (i grinded oats in a food processor to make oat flour, that's a personal preference)
1/4 c milled flax seed (you could replace this with flour..i just added it for extra fiber/protein)
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp stevia
1/2 c chopped walnuts
1/2 c maple chunks (i found these at a [sadly] closing local health food store..they're AWESOME)
2/3 applesauce

Bake at 350 degrees for 11 1/2 minutes. This will make roughly 14 chewy cookies =)
