Corn bread muffins

I just bought the Dr. Oetker Organics: Cornmeal Organic Muffin Mix.

It's the one that comes in a yellow package. The ingredients in the mix is basically wheat flour, corn flour, baking soda, salt, and sugar.

The back says to mix 2 TB of oil with an egg and a cup of water. For obvious reasons I won't be using the egg.

Anyone have any secrets to awesome cornbread? Should I replace the egg with anything?

Please please help.. this is going to be made for some girls who are skeptical of veg food and I must win them over :)
