this is another good recipe for those trying to cut down on soy products... i got the idea from one of rachael ray's 30 min meals books, i think the original one.
just thinly slice zucchini into rounds and marinate them in olive oil, salt, pepper, italian seasonings (oregano, basil, thyme... whatever you think would go good in pepperoni), and maybe a few red pepper flakes. then, voila! use just like pepperoni :D
Some of my friends and I refer to our top fat roll as our muffin top, and I always loved that term. I was even more stoked when I started making muffin tops. As in the actual bready ones. I have a recipe for blueberry ones, but decided to make some banana nut muffin tops as well, so just altered the recipe a bit. I actually think I like these better than the blueberry ones. (I actually altered some other parts of the recipe too, however the change was really nominal)
Some friends and I are getting together for a sort of vegan chili potluck next week. I have a friend who is allergic to all beans, nuts, and legumes (this, of course, includes all soy products). He's usually left without much to eat in potluck-type situations and I fear that this time it'll be even worse than usual.
Any ideas for making vegan chili (or something chili-like) without beans, legumes, or nuts?
So I've been looking EVERYWHERE for a vegan shell cannoli recipe. I've found many recipes for the filling but none for the shell, darnit! Any way, I know the cookbook, The Artful Vegan has one & I've been to every health food store and none carry it, including all the book stores. I'd order it online but I need this recipe before Tuesday so if anyone can PLEASE give me a cannoli shell recipe, I'll give you 1,000 internet hugs and kisses :) I really want to suprise my italian husband so it would mean a lot to me.
